Roasted Grapefruit with Moroccan Tea Whipped Cream
A green tea and mint whipped cream on top of baked grapefruits make a fresh and refreshing dessert or snack.
Servings:2-4
Total Time: 45mins
Ingredients:
½ cup heavy whipping cream(well chilled)
Pinch of salt
4 Moroccan tea bags/Green tea with peppermint and spearmint
2 red grapefruits(peeled, deseeded, cut into halves)
1-2 tbsp.brown sugar
¼-½ cup sweetened coconut
Directions:
1. Add the whipping cream and a pinch of salt into a small saucepan and place over moderate to low heat.
2. Allow the mixture to get hot, but do not allow it to boil.Add the 4 tea bags and remove from the heat.
3. Cover, and set to one side to infuse for half an hour.
4. Taste, and if the flavor is not intense enough, chill overnight in the fridge.
5. Preheat the main oven to 375 degrees F.
6. Arrange the halves of grapefruit on a baking tray.Add the brown sugar and sweetened coconut and bake for 10-15 minutes, or until the coconut is toasted.Transfer the grapefruit to plates.
7. Using a hand mixer, whip up the heavy whipping cream until firm peaks begin to form.Serve over the top of the baked grapefruit!
